BRANDY PICKLED PEARS
1/4 cup brandy
1/2 cup white balsamic 1/4 cup honey
1 cup water 1 tbsp salt flakes
5 small firm beurre bosc pears,
peeled and quartered 1 cinnamon quill
1 Combine brandy, balsamic, honey, water and salt in a medium saucepan over medium heat and bring to the boil. Add pears and cinnamon quill. Simmer for 2 minutes. Take off the heat and set aside to cool in the liquid. These will keep refrigerated for up to 2 weeks.
