Being adventurou­s in the kitchen has never been this exciting. Why not try the delicious Frittata which is easy to prepare and does wonders to the palette.

INGREDIENT­S

1 broccoli head broken up small 2 carrots diced 1 red capsicum diced 1 onion diced 2 tbsp whole seeded mustard 2 tsp crushed garlic 12 eggs whisked

METHOD

Preheat oven grill to 250 degrees on grill. Stir fry all veggies in a medium size fry pan until slightly soft.

Stir in garlic and mustard.

Add whisked eggs and spread evenly. Cook for a further 5-10 minutes until the bottom is cooked and the top has lots of bubbles but is not quite cooked.

Put the fry pan under the grill for approx 5-8 minutes or until risen and golden on top to finish it off.
