Orange and cin­na­mon bas­mati rice

Serves 6 as a side

IN­GRE­DI­ENTS

1 tbsp but­ter 1 tbsp co­conut oil 1 large finely chopped onion 1 fam­ily packet of bas­mati steamed rice 6 tbsp orange juice 1 tbsp freshly grated orange zest 1 tsp ground cin­na­mon ½ tsp ground cumin ½ cup chopped salted toasted cashew nuts

½ cup toasted pine nuts Op­tional: Fresh co­rian­der leaves, to serve

METHOD

Melt but­ter and co­conut oil in fry-pan over a medium-high heat. Add onion and saute for about 5 min­utes. Cook rice in mi­crowave ac­cord­ing to packet in­struc­tions. Add the cooked rice to the fry­pan as well as the orange juice, orange peel, cin­na­mon, cumin, and the nuts. Stir for a minute then serve.
