Orange and cinnamon basmati rice
Serves 6 as a side
1 tbsp butter 1 tbsp coconut oil 1 large finely chopped onion 1 family packet of basmati steamed rice 6 tbsp orange juice 1 tbsp freshly grated orange zest 1 tsp ground cinnamon ½ tsp ground cumin ½ cup chopped salted toasted cashew nuts
½ cup toasted pine nuts Optional: Fresh coriander leaves, to serve
Melt butter and coconut oil in fry-pan over a medium-high heat. Add onion and saute for about 5 minutes. Cook rice in microwave according to packet instructions. Add the cooked rice to the frypan as well as the orange juice, orange peel, cinnamon, cumin, and the nuts. Stir for a minute then serve.
