I’ve al­ways been a big fan of Shane Delia and have watched most of his shows on ei­ther Life­style Food or SBS Food. I’m fond of Mid­dle East­ern food and it ex­cites me when I come across a new recipe from him. One of the spices I dis­cov­ered watch­ing one of his shows was Aleppo pep­per, aka Pul Biber or Turk­ish chilli, and now I think I’m ad­dicted. I never came across it in my early trav­els for some rea­son but I’m re­ally glad I have now. Aleppo pep­per is a mild chilli, a deep blood red in colour and fruity tast­ing with a hint of salt. (Have I con­fused you? You’ll just have to try it.) It is used all over Turkey and the Mid­dle East in var­i­ous dishes. Try it with fish and chicken mar­i­nated with gar­lic, a tiny bit of salt and a wee bit of honey… just yummy.
