HOORAY FOR ALEPPO
THANKS, SHANE DELIA, FOR INTRODUCING ME TO THIS ADDICTIVE MILDLY FLAVOURED CHILLI
I’ve always been a big fan of Shane Delia and have watched most of his shows on either Lifestyle Food or SBS Food. I’m fond of Middle Eastern food and it excites me when I come across a new recipe from him. One of the spices I discovered watching one of his shows was Aleppo pepper, aka Pul Biber or Turkish chilli, and now I think I’m addicted. I never came across it in my early travels for some reason but I’m really glad I have now. Aleppo pepper is a mild chilli, a deep blood red in colour and fruity tasting with a hint of salt. (Have I confused you? You’ll just have to try it.) It is used all over Turkey and the Middle East in various dishes. Try it with fish and chicken marinated with garlic, a tiny bit of salt and a wee bit of honey… just yummy.
