Win­ter is here again and this mean soup sea­son! I love a good soup and have plenty of recipes up my sleeve for posh soups, which taste won­der­ful. How­ever, they of­ten have a lot of in­gre­di­ents and these days, it just puts me off as I don’t have the time like I used to. We are back serv­ing soups for lunch in the shop so I have cre­ated some easy soups, which are just de­li­cious. I come in early, the slow cooker gets fired up, the liq­uid base goes in and then the lay­er­ing of in­gre­di­ents, in­clud­ing spices, starts. By 11.30am-ish, a gor­geous, creamy, hearty soup is ready to feed the masses. Don’t you just love slow cook­ers? Most of our soups are veg­e­tar­ian but you will see a few meat ones start­ing to ap­pear on the win­ter soup menu. I do a lovely Thai chicken and co­conut soup for Mr Red Hot Chilli Pep­per that al­ways gets the thumbs up so that will be the first meat soup off the rank.
