Winter is here again and this mean soup season! I love a good soup and have plenty of recipes up my sleeve for posh soups, which taste wonderful. However, they often have a lot of ingredients and these days, it just puts me off as I don’t have the time like I used to. We are back serving soups for lunch in the shop so I have created some easy soups, which are just delicious. I come in early, the slow cooker gets fired up, the liquid base goes in and then the layering of ingredients, including spices, starts. By 11.30am-ish, a gorgeous, creamy, hearty soup is ready to feed the masses. Don’t you just love slow cookers? Most of our soups are vegetarian but you will see a few meat ones starting to appear on the winter soup menu. I do a lovely Thai chicken and coconut soup for Mr Red Hot Chilli Pepper that always gets the thumbs up so that will be the first meat soup off the rank.
