We eat a lot of curry at our house. We en­joy the bold flavours, the spice, but more im­por­tantly, we use it as a means to eke out. In fact, at the end of each week, we en­joy a soup, a frit­tata or a curry to clean out the fridge. Some week’s efforts are not In­sta­gram wor­thy, but it doesn’t mat­ter. Sta­tis­tics show we dis­card up to 20 per cent of ev­ery­thing we buy, which equates to $8 bil­lion of per­fectly ed­i­ble food go­ing in the bin. It makes me feel good to tread a bit lighter on the earth.
