There are cer­tain dishes that show me how well a young chef can cook. Pre­par­ing a sim­ple three-egg omelette is a test for any cook: per­fec­tion means no colour on the ex­te­rior and a barely set in­te­rior. An­other ap­par­ently sim­ple dish is a clas­sic spaghetti aglio, olio e peper­on­cino. This Neapoli­tan dish of gar­lic, olive oil, chilli, spaghetti and parme­san re­lies on lots of lit­tle things done well to achieve a to­tal that far ex­ceeds the sum of its parts.
