Recipe: Awe­some Egg Cups

Olive oil spray 12 slices prosci­utto 1 bag baby spinach leaves, washed and dried 12 eggs Grated parme­san cheese and/or sliced herbs


STEP 1. Use olive oil spray to grease a muf­fin pan. Make sure you spray in­side each muf­fin hole so that your eggs don’t stick.

STEP 2. Wrap a slice of prosci­utto around the in­side of each muf­fin hole. If your prosci­utto slices are long enough, cover the bot­tom of each muf­fin hole too.

STEP 3. Place 5 baby spinach leaves in each muf­fin hole.

STEP 4. Crack an egg into each muf­fin hole, on top of the spinach. Bake egg cups for 15 min­utes in a warm oven (about 180°C).

STEP 5. Top each egg with grated parme­san cheese or a sprin­kle of herbs be­fore serv­ing.
