Quick and easy blender recipes for the hol­i­days

These recipes will help to main­tain health over the hol­i­day sea­son in the eas­i­est pos­si­ble way – they are great to taste. For all of them, you sim­ply blend the in­gre­di­ents to­gether in a high speed blender and add any top­pings sug­gested or de­sired.

Hol­i­day 2-in-1 soup and salad

A fast and easy way to get your greens in. I al­ways have a few pre­roasted sweet po­ta­toes on hand in the fridge, as they also make ex­cel­lent snacks (with a bit of but­ter) and ad­di­tions to baby’s meals!

SERVES 2 FOR BLEND­ING:

1 baked sweet po­tato (1.5 hours at 200°C) – must be done in ad­vance 2-3 cups good qual­ity veg­etable stock, heated to the tem­per­a­ture you’d like for eat­ing when blended Sea salt to taste 1/2 tsp ground cin­na­mon 1/4 tsp ground nut­meg 1/2 tbsp mixed herbs (oregano, pars­ley, mar­jo­ram) TO FOLD IN AF­TER BLEND­ING: 5 hand­fuls of baby spinach or mixed sprouts, e.g., sun­flower, broc­coli, len­til, snow pea sprouts TOP­PING: 1 avo­cado, cubed, di­vided evenly Cin­na­mon Sea salt

Creamy lime pie in a bowl

One of my ab­so­lute FAVOURITES! This is ad­dic­tive – you have been warned! I love desserts that con­tain hid­den greens. The key to bal­anc­ing the greens is in the creamy avo­cado and fresh lime juice and zest.

SERVES 2 FOR BLEND­ING:

2 hand­fuls of baby spinach 1/2 avo­cado juice of 2 limes 1 tsp lime zest (op­tional) 1/2 cup young co­conut meat (crack open a co­conut from your lo­cal or­ganic store) 1 cup or­ganic young co­conut wa­ter 10-20 drops vanilla ste­via (to taste) or 1 tbsp agave nec­tar 1/3 cu­cum­ber (op­tional, for ex­tra fresh­ness) 1/2 tray of ice (op­tional) FOR TOP­PING: 1 tbsp. dried co­conut flakes

Healthy choco­late ice cream

Be­cause what’s an Aussie Christ­mas with­out co­pi­ous amounts of ice cream?

SERVES 2-4 FOR BLEND­ING:

2 peeled and frozen ba­nanas 1/2 cup co­conut milk or milk of your choice (enough to keep the mix­ture go­ing) 1/3-1/2 cup raw ca­cao or pure co­coa pow­der (or a mix of both) 1 tsp vanilla ex­tract 1 tbsp agave pinch of sea salt Serve im­me­di­ately while still chilled. n
