Sal­vaje is a restau­rant in a con­verted old fac­tory, which is quite un­usual for Spain. Its soar­ing ceil­ings mean the space is full of light, yet it doesn’t feel too cav­ernous be­cause it’s di­vided by in­dus­trial shelv­ing units packed with plants. There are colour­ful, ab­stract mu­rals on the walls, too – it’s got a great, cre­ative feel to it. I’d go for the tast­ing menu (in­clud­ing oys­ters with kim­chi and cherry gaz­pa­cho) or the raw tuna tartare, which is a spe­cial­ity of Seville. face­book.com/sal­vaje.sevilla
