Stacks are great, but they only work on the desktop, merely organizing documents in piles rather than doing things with them. By contrast, Hazel ($32, noodlesoft.com) can monitor folders and perform actions to their items.
The walkthrough below gets you started, but do experiment further with the app’s rules, because they’re hugely powerful. Also, explore the Trash tab, which contains App Sweep. This removes an app’s support files when the original app is deleted.
