Roast a Side of Salmon
1 Position your oven racks in the bottom third and centre of the oven. Preheat the oven to 95°C. Put a baking pan half-filled with warm water on the bottom rack.
2 Brush a baking sheet with oil. Place a side of salmon (about a kilo), pin bones removed, skin side down, on the sheet. Brush the fish with oil and season with salt and pepper.
3 Bake the fish until slightly firm to the touch, so the tip of a small, sharp knife easily flakes the flesh, 1 to 1½ hours, depending on the thickness of the fillet. Remove the salmon from the oven and let cool slightly, then transfer to a platter. Feeds 8 —L. J.
