Roast a Side of Salmon

1 Po­si­tion your oven racks in the bot­tom third and cen­tre of the oven. Pre­heat the oven to 95°C. Put a bak­ing pan half-filled with warm wa­ter on the bot­tom rack.

2 Brush a bak­ing sheet with oil. Place a side of salmon (about a kilo), pin bones re­moved, skin side down, on the sheet. Brush the fish with oil and sea­son with salt and pep­per.

3 Bake the fish un­til slightly firm to the touch, so the tip of a small, sharp knife eas­ily flakes the flesh, 1 to 1½ hours, depend­ing on the thick­ness of the fil­let. Re­move the salmon from the oven and let cool slightly, then trans­fer to a plat­ter. Feeds 8 —L. J.
