FLAVOURS of Tuscany are coming to a southern winery with the new restaurant’s head chef promising simple, honest Italian cooking.

Jeff Workman, who forged his reputation as a chef at Peacock and Jones and the Saffire Freycinet, has become food director and head chef at Osteria Vista.

The restaurant will sit at Stefano Lubiana Winery in

Granton as the newest venture from Isabella Lubiana and Joel Edwards of Ti Ama restaurant in Salamanca and Local Pizza in Berriedale.

Mr Workman said Osteria Vista would offer a fourcourse set long-lunch menu, starting with antipasto, then in-house-made pasta, a shared protein dish and dessert.

“Lyndall lamb shoulders in Hamilton are being supplied through Meat Mistress,” Mr

Workman said. “Emma (Wills) will drive past (and) drop lamb shoulders off on her way to pick up fresh lamb the next week.

“We’re keeping it straightfo­rward but I want to evolve into house-made pastry, clotted cream, more of a comfort food in the countrysid­e.”

The chef said all four courses would be available for $65 from Friday to Sunday, paired with a selection of Stefano Lubiana wines.

“On a beautiful, sunny day we want fresh, tasty food served in a really comfortabl­e space,” Mr Workman said.

He said a wood-fired pizza oven would be installed in coming weeks, with seating mainly inside and options emerging for outdoor seating in the courtyard.
