Turkey and cherry salad

Let­tuce, washed 250g turkey, cooked 1 cup fresh cher­ries, de­seeded and halved 2 stalks cel­ery, sliced di­ag­o­nally 3 spring onions, chopped 1⁄2 cup sliv­ered al­monds, toasted Dress­ing 1⁄4 cup olive oil 1⁄4 cup lime juice 1 tsp fresh ginger, grated 2 tbsp chopped pars­ley


Line a salad bowl with let­tuce leaves and top with turkey, cher­ries, cel­ery, spring onions and al­monds. Place all dress­ing in­gre­di­ents in a jar. Shake well and pour over salad. Serve im­me­di­ately.
