A long-standing commitment to improving environmen­tal practices has put Tahbilk Winery on track to become carbon neutral, naturally. The winery is already operating under carbon neutral status by buying carbon credits to offset its emissions. A recent count confirmed 97 per cent of the winery’s emission were being offset naturally, that is, without buying external offsets.

“Environmen­t is everything to us,” says Hayley Purbrick. “You can’t help but be connected to the environmen­t around you when you rely on a piece of produce to make something beautiful.”

Tahbilk has its first carbon audit in 2008 and, since 2013, has achieved a net 45 per cent reduction in carbon emissions. Tahbilk’s eco journey started in the mid 1990s and has included various projects, not least of all the native revegetati­on of 160 hectares on the estate. Solar power and even heat-reflective paint on the restaurant roof are also among the environmen­tal strategies.
