Herbed Rice Salad with Feta and Grapes
Serves 4, Prep 20 mins
250g packet microwavable rice medley ½ cup flaked almonds, toasted 1 cup coarsely chopped fresh mint 1 cup coarsely chopped fresh coriander
leaves and stems 100g Greek feta, crumbled 200g red seedless grapes, halved
DRESSING 2 tblsps olive oil 1 tblsp lemon juice 1 tsp honey Salt and pepper, to taste
1 Heat rice according to packet directions. Transfer to a large serving bowl. Stir to separate grains. Let cool slightly. 2 To make the dressing, combine all ingredients in a small jug. Whisk well. 3 Add the almonds, mint, coriander, feta and grapes to rice. Stir to combine. Pour over the dressing. Toss well. Serve.
