Cheesy Fajita Chicken

Serves 4, Prep 20 mins, Cook 8 mins

2 x 300g chicken breast fillets, trimmed 1 tblsp fajita seasoning 1 tblsp olive oil 1 small red capsicum, cut into thin strips 1 small green capsicum, cut into thin strips ¹⁄³ cup grated mozzarella cheese Corn chips and lime pieces, to serve

SALAD

1 baby cos lettuce, trimmed, washed, torn 1 avocado, sliced 250g punnet cherry tomatoes, halved ¼ cup French salad dressing

1 Cut fillets horizontal­ly in half through the side to give two thinner pieces. Toss with seasoning and oil. 2 Heat an oiled, large, non-stick frying pan over a medium to high heat. Add chicken. Cook for about 2 minutes on each side, or until browned. Transfer to an oven tray lined with baking paper. Wipe pan clean. 3 Heat same, oiled frying pan over a medium heat. Cook capsicums, stirring occasional­ly for 8 minutes, or until soft. Divide over chicken. Sprinkle with cheese. 4 Cook in a hot oven (200C) for about 8 minutes, or until chicken is cooked through. 5 Meanwhile, make salad. Combine all ingredient­s in a bowl. 6 Serve chicken with salad, corn chips and lime pieces.
