Fried shallots, a popular condiment used in Thai, Malaysian and Vietnamese cooking, are crisp, sweet and salty. They add a delicious flavour to stir-fries and Vietnamese salads, or can be sprinkled over Malaysian or Thai curries and soups. Available from Asian grocers or major supermarke­ts, they can be kept for up to one month stored in an airtight container in the fridge, or freeze for up to two months.
