Minted Pea and Ricotta Fritters

Serves 4, Prep 15 mins, Cook 12 mins

1 cup frozen minted

peas ½ cup self-raising flour 2 eggs 250g fresh ricotta Ajvar relish, to serve

1 Toss peas and flour in a large bowl. Add eggs and ricotta. Season with salt and pepper. Stir to combine. 2 Heat a lightly oiled, large, non-stick frying pan over a medium heat. Add a heaped tablespoon of mixture, spreading to about 6cm in diameter, to make a fritter. Repeat to make four more. 3 Cook for about 2 minutes on each side, or until golden brown. Remove. Cover to keep warm. Repeat with remaining mixture to make about 15 fritters in total. 4 Serve warm fritters with relish and mixed salad leaves (optional).
