Tuna Pasta Salad

Serves 4-6, Prep and Cook: 20 mins

250g orec­chi­ette pasta 2 tblsps sun­dried tomato pesto 185g can tuna in oil,

un-drained 250g pun­net cherry toma­toes,

halved ¼ cup grated parme­san ½ cup chopped fresh pars­ley

1 Cook pasta in a large saucepan of boil­ing wa­ter for about 10 min­utes, or un­til ten­der. Drain, re­serv­ing ¼ cup of the cook­ing wa­ter. Place pasta in a large bowl. Cool. 2 Stir pesto into re­served wa­ter in a small jug. 3 Add to pasta with the un-drained tuna, toma­toes, parme­san and pars­ley. Toss to com­bine.
