Tuna Pasta Salad
Serves 4-6, Prep and Cook: 20 mins
250g orecchiette pasta 2 tblsps sundried tomato pesto 185g can tuna in oil,
un-drained 250g punnet cherry tomatoes,
halved ¼ cup grated parmesan ½ cup chopped fresh parsley
1 Cook pasta in a large saucepan of boiling water for about 10 minutes, or until tender. Drain, reserving ¼ cup of the cooking water. Place pasta in a large bowl. Cool. 2 Stir pesto into reserved water in a small jug. 3 Add to pasta with the un-drained tuna, tomatoes, parmesan and parsley. Toss to combine.
