Melt,n,mix Choc-chip Slice
Makes 18, Prep and Cook: 30 mins
½ cup self-raising flour ½ cup plain flour 2 tblsps cocoa powder 1 cup brown sugar,
firmly packed 125g unsalted butter,
melted 1 egg, lightly beaten 1 tsp vanilla extract ¹⁄³ cup White Baking Bits ¹⁄³ cup Milk Baking Bits
ICING ½ cup icing sugar mixture 1 tblsp cocoa powder 1 tblsp hot water 1 Grease an 18cm x 28cm rectangular pan. Line base and sides with baking paper, extending paper 2cm above pan edges. 2 Sift combined flours and cocoa into a large bowl. Stir in sugar. Make a well in the centre. Stir in butter, egg and vanilla until combined. Spread evenly into prepared pan. Sprinkle over the combined baking bits. Gently press into top of slice. 3 Cook in a moderate oven (180C) for about 20 minutes, or until a skewer inserted into the centre comes out clean. Cool the slice in pan. 4 To make icing, combine all ingredients in a bowl. Stir until smooth. Transfer to a snap-lock bag. Squeeze into one corner. Twist bag. Snip tip. 5 Drizzle icing over slice. Lift onto chopping board. Cut into squares.
TIP
Slice can be made up to five days ahead. Store in an airtight container. For a change, replace baking bits with chopped Smarties.
