Microwave Coconut Rice

Ramp things up with your next curry or stir-fry and serve this addictive, coconut-flavoured rice. It’s just as good served with maple syrup or sprinkled with brown sugar, then topped with sliced fresh fruit, for a quick dessert.

1 cup jasmine rice ½ cup coconut milk

1 Place rice in a large, deep, microwave-safe dish (12-cup capacity) with coconut milk and 1¾ cups water. Season with salt. Stir to combine. 2 Cook, uncovered, on High (100%) in a 1200-watt microwave for 5 minutes. Stir well. Cook on Medium (50%) for a further 6 minutes, or until rice is tender and liquid is almost absorbed. Remove. Fluff with a fork. Stand, covered, for 2 to 3 minutes before serving.
