Mini Witch Hat Cupcakes

137g packet Original Oreo Cookies

Midnight Magic Sprinkles, to decorate

CUPCAKES

75g unsalted butter, melted ½ cup caster sugar

½ cup self-raising flour

¼ cup milk

2 tblsps cocoa powder, sifted 1 egg

FROSTING

300g unsalted butter, chopped, at room temperatur­e 3 cups icing sugar mixture 1 tblsp milk

Violet and leaf green food

colouring gels, to tint

1 Line two x 12-hole mini muffin pans (1-tblsp capacity) with paper cases.

2 To make cupcakes, place all ingredient­s in a small bowl of an electric mixer. Beat on low speed for 20 seconds, or until just combined. Then beat on high speed for a further 1 minute, or until smooth and thick. Spoon evenly into paper cases (about 1 tblsp each).

3 Cook in a moderate oven (180C) for about 10 to 12 minutes, or until just firm when lightly touched in the centre. Remove. Stand in pans for 5 minutes. Transfer to a wire rack to cool.

4 To make frosting, beat butter in a small bowl of an electric mixer until pale and creamy. Beat in sugar, ½ cup at a time, until combined. Beat in milk. Transfer 1½ cups to a bowl and tint violet. Tint remaining frosting dark green.

5 Transfer dark green frosting to a disposable piping bag fitted with a 9mm star nozzle. Transfer violet frosting to a disposable piping bag fitted with a 5mm plain nozzle.

6 To assemble, twist 12 of the cookies to separate halves. Pipe dark green frosting onto each cupcake. Top with a cookie, centre-side facing down. Pipe violet frosting onto cookies to create witch hats. Decorate with sprinkles.
