Passionfruit Kisses
Makes 32, Prep and Cook: 50 mins
¼ cup fresh passionfruit pulp ¾ cup plain flour
¼ cup self-raising flour
½ cup cornflour
¼ cup custard powder 125g unsalted butter, chopped,
at room temperature
½ cup caster sugar
1 egg
FILLING
50g unsalted butter, softened 1 cup icing sugar
3 tsps fresh passionfruit pulp
1 Grease two large oven trays and line with baking paper.
2 Press passionfruit pulp through a sieve into a small bowl. Discard seeds. You will need 1 tblsp juice.
3 Sift all flours and custard powder onto a sheet of baking paper.
4 Beat butter and sugar in the small bowl of electric mixer until light and fluffy. Add egg and passionfruit juice. Beat until combined. Stir in flour mixture, in two batches.
5 Spoon into a piping bag fitted with a 1cm fluted nozzle. Pipe rosettes (3cm in diameter), about 3cm apart, onto prepared trays.
6 Cook both trays in moderate oven (180C), swapping halfway, for about 8 to 10 minutes, or until light golden. Remove. Cool on trays.
7 To make filling, beat all ingredients in a small bowl with a hand-held electric mixer until light and fluffy.
8 Sandwich biscuits together with filling.
