Tex-mex Baked Potatoes
Serves 6, Prep and Cook: 1 hour, 15 mins
1.5kg Sebago potatoes, peeled,
cut into 3cm pieces
2 tblsps vegetable oil
30g sachet spice mix for tacos 250g shortcut bacon, cut into
2cm pieces
¹⁄³ cup finely chopped pickled
jalapenos
1 cup shredded Tasty cheese 3 green spring onions,
finely sliced
Sour cream, to serve
1 Place potatoes in a large roasting pan. Drizzle with oil.
Season with salt and pepper. Toss to coat.
2 Cook in a hot oven (200C) for 30 minutes. Remove. Sprinkle with spice mix. Toss well to coat. Stir in bacon and jalapenos. Return pan to hot oven for a further 20 minutes or until potatoes are tender. Remove.
3 Sprinkle cheese over potatoes. Return to oven for a further 5 minutes or until golden brown. Remove. Sprinkle with onions. Toss gently.
4 Serve with sour cream.
