Party Mix Lolly Box

Serves 16, Prep and Cook: 1 hour, 45 mins

2 x 535g packets White Wing’s

Rich Chocolate cake mix 125g unsalted butter, softened 4 eggs

½ x 150g packet multi colour

popcorn

114g box Cadbury White

Chocolate Fingers

465g bag classic party

mix lollies

¼ cup M&M’S

FROSTING

125g unsalted butter, chopped,

at room temperatur­e

2½ cups icing sugar mixture 1 tblsp milk

Liquid blue food colouring

1 Grease a 20cm square x 7cm deep cake pan. Line base and sides with baking paper, extending paper 2cm above pan edges.

2 Place both cake mixes in the large bowl of an electric mixer. Reserve frosting sachets for another use. Add butter, eggs and 1½ cups water. Beat on low speed until combined. Increase speed to medium. Beat for a further 1 to 2 minutes until smooth and thick. Spoon into prepared pan. Smooth over top.

3 Cook in a moderately slow oven (160C) for about 1 hour and 20 minutes, or until a skewer inserted into the centre comes out clean. Remove. Stand in pan for 20 minutes. Transfer cake to a wire rack to cool.

4 To make frosting, beat butter in the small bowl of an electric mixer until pale and creamy. Add sugar and milk. Beat on low speed until combined. Increase speed to medium. Beat until light and fluffy. Tint blue with colouring.

5 Trim top of cake to sit flat. Reserve trimmings for another use. Place cake with base-side facing up, onto a serving plate. Spread frosting over top and sides.

6 Using picture as a guide, press popcorn around side of cake. Arrange chocolate sticks over the top to make multiple compartmen­ts, trimming to fit neatly. Fill each compartmen­t with lollies.
