Italian Meatball Pizzas
Serves 4-6, Prep and Cook: 45 mins
1 tblsp olive oil
6 x 12cm fresh individual
pizza bases
²∕³ cup tomato pasta sauce 2 cups grated pizza cheese 1 small onion, finely chopped ½ small red capsicum, chopped 1 roma tomato, finely chopped ¼ cup fresh basil leaves Extra basil leaves, to serve
MEATBALLS
300g pork and veal mince 1 clove garlic, crushed 2 tblsps tomato pasta sauce ¹∕³ cup grated parmesan 2 tsps dried Italian herbs Salt and pepper, to taste
1 To make meatballs, combine all ingredients in a bowl. Mix well. Roll about 2 tsps of mixture into balls. (Makes 24). 2 Heat oil in a large, non-stick frying pan over a medium heat. Add the meatballs. Cook, turning occasionally, for about 5 minutes, or until browned all over. Remove.
3 Meanwhile, place pizza bases on an oiled, large oven tray.
4 Cook in a very hot oven (220C) for about 7 minutes, or until crisp. Remove.
5 Spread sauce evenly over bases. Sprinkle with half the cheese. Top evenly with the onion, capsicum, tomato, basil and meatballs. Sprinkle with the remaining cheese. Return to oven.
6 Cook for a further 10 to 12 minutes, or until golden.
7 Serve garnished with extra basil leaves.
