Smartie Cookies
Makes 12, Prep and Cook: 45 mins
125g unsalted butter, chopped,
at room temperature ¾ cup caster sugar 1 tsp vanilla extract 1 egg, at room temperature 1½ cups self-raising flour 90g Smarties
1 Line two large oven trays with baking paper.
2 Beat butter, sugar and vanilla in a small bowl with an electric mixer until light and fluffy. Beat in egg until combined. Transfer to a large bowl. Add sifted flour. Stir until combined.
3 Roll 2 tblsps of mixture into balls. Arrange 5cm apart on prepared trays. Gently press down to flatten slightly. Press seven Smarties into the top of each cookie.
4 Cook both trays at the same time, in a moderately slow oven (160C) for about 15 to 20 minutes, swapping trays halfway through, or until golden brown. Remove from oven.
5 Cool cookies on trays.
