Asian Noodle Fritters

Makes 8, Prep and Cook: 35 mins

3 x 85g pkts mi goreng instant fried noodles

350g bag Asian-style salad kit

4 eggs, lightly beaten

4 green spring onions, thinly sliced, plus extra to serve

Kewpie mayonnaise, to serve

1 Reserve seasoning, oil and sauce sachets from instant noodle packets.

2 Cook noodles, according to packet directions. Drain. Place in a bowl and add reserved dry seasoning and oil sachets. Toss until well combined.

3 Combine dressing sachet from salad kit and reserved sauce sachets in a jug.

4 Add eggs, onions and salad mixture to noodles. Reserve crunchy noodles from salad kit for another use. Mix well to combine.

5 Heat enough vegetable oil in a large frying pan, over a medium to low heat, to shallow fry. Spoon ½ cup mixture into pan and spread evenly to 12cm in diameter. Repeat to make another fritter. Cook for about 3 minutes on each side, or until golden. Remove. Transfer fritters to an oven tray. Cover with foil to keep warm. Repeat to make 8 fritters in total.

6 To serve, drizzle fritters with mayonnaise and sauce mixture, and sprinkle with extra onions.
