Spicy Chorizo and Avocado Toastie

Makes 4, Prep and Cook: 25 mins

8 thick slices white bread

75g butter, softened

80g sliced chorizo salami

8 slices Tasty cheese

1 avocado, sliced

180g chargrille­d capsicum, drained

50g baby rocket leaves, washed

1 Spread four slices of bread evenly with butter. Turn bread over, butter-side down. Top evenly with salami, cheese, avocado, capsicum and rocket. Season with salt and pepper. Place remaining bread slices on top. Spread tops with butter. 2 Heat a large, non-stick frying pan over a medium heat. Add two sandwiches. Cook for about 3 minutes, or until golden. Turn sandwiches over. Cook for a further 3 minutes, or until other side is golden. Remove from pan. Repeat with remaining sandwiches. 3 Cut in half to serve.
