Vegie Club Sandwiches

Serves 4-6, Prep: 25 mins

250g tub cottage cheese

2 small stalks celery, finely chopped

12 large slices wholegrain bread

½ cup chopped salted cashews

1 large carrot (180g), coarsely grated

¼ cup garlic aioli

4 coral lettuce leaves

2 small vine-ripened tomatoes, sliced

1 large avocado, sliced

1 Combine cottage cheese and celery in a bowl. Season with salt and pepper. Mix well.

2 Lightly toast bread. Spread cheese mixture evenly over four slices. Sprinkle with cashews and grated carrot.

3 Spread aioli over another four toast slices. Place, aioli side-up, on top of carrot.

4 Divide lettuce, tomato and avocado over the top. Season with salt and pepper. Top with remaining toast slices.

5 Using a serrated knife, cut each sandwich into three pieces. Secure with toothpicks to serve.
