Chicken, Almond and Avocado Finger Sandwiches

2 ½ cups shredded roast chicken
meat (400g)
½ cup whole egg mayonnaise ½ cup smoked almonds,
finely chopped
15 slices white bread Spreadable butter
2 medium avocados, thinly sliced 50g baby rocket
1 Combine chicken, mayonnaise and almonds in a medium bowl. Season with salt and pepper.
2 To assemble, spread one side of each slice of bread with butter.
3 Evenly spread chicken mixture over five slices of bread, butteredside up. Top with another five bread slices, buttered-side down. Divide avocado slices and rocket evenly over bread. Top with remaining bread slices, buttered-side down.
4 Using a serrated or electric knife, cut away and discard crusts. Cut each sandwich into three even fingers.
Place on a serving plate. Cover and refrigerate.
5 Serve garnished with micro greens (optional).
