Croque Madame Muffins

Serves 6, Prep and Cook 30 mins

½ cup grated Tasty cheese

1 To make sauce, melt butter in a medium saucepan over a medium heat. Add flour. Cook, stirring for 1 minute. Slowly add milk, whisking until combined. Whisk in mustard. Continue whisking over a medium to high heat until boiling and thickened. Remove from heat. Stir in cheese. Season with salt and pepper. Transfer to heatproof bowl. 2 Place base and tops of muffins, cut-side up, on a large oven tray lined with baking paper.

3 Spoon 1 tblsp of the sauce over bases and tops. Spread evenly to edges.

4 Divide ham evenly over each. Spoon remaining sauce over ham. Sprinkle with cheese.

5 Cook in a very hot oven (220C) for about 5 minutes, or until golden brown. Remove. 6 Meanwhile, place six greased, round egg rings (7.5cm in diameter) in a greased, large, non-stick frying pan over a medium heat. Break an egg into each ring. Cook for 3 minutes. Remove rings. Cook for a further 5 to 6 minutes, or until cooked to your liking. Remove from pan. 7 To serve, stack two halves together on each plate. Top with eggs. Garnish with chives.
