Sweet Chilli and Mango Relish

Makes 2½ cups, Prep and Cook 25 mins

1 cup apple cider vinegar ½ cup caster sugar 2 cloves garlic, crushed 2 large mangoes (900g), peeled, cut into 1cm pieces

1 long fresh red chilli,

finely chopped

1 tblsp fish sauce

2 tblsps lime juice

¼ cup finely chopped

fresh coriander

1 Combine vinegar, sugar and garlic in a medium saucepan over a medium heat. Bring to boil. Gently boil for about 5 minutes, or until reduced by half.

2 Add mangoes, chilli and sauce. Return to boil. Gently boil, stirring occasional­ly, for a further 5 minutes, or until mangoes are softened.

3 Transfer relish to a heatproof jug. Cool. Refrigerat­e, covered, until cold.

4 Just before serving, stir in the juice and coriander.
