1 clove garlic
2 flat mushrooms (160g),
stems removed
2 large eggs (50g each) 2 teaspoons thyme leaves,
chopped
2 thin slices wholegrain
sourdough bread (50g) 130g cherry truss tomatoes 2 teaspoons balsamic
vinegar
½ bunch broccolini (90g), trimmed, halved lengthways
1 bunch asparagus (170g),
trimmed
1 Preheat oven to 220°C. Line a large oven tray with baking paper. Thinly slice half the garlic clove.
2 Place mushrooms, stem-side up, on tray. Crush remaining half garlic onto mushrooms. Crack an egg into each mushroom cavity; sprinkle with thyme. Season.
3 Place bread on other end of tray, top with sliced garlic and the tomatoes, then drizzle with vinegar. Add broccolini and asparagus to tray; sprinkle lightly with water. Season vegetables with pepper.
4 Bake for 10 minutes or until mushrooms are cooked through, egg whites are cooked and tomatoes have softened. Serve straightaway.
