Chilli Asparagus
Serves 4, Prep and Cook 20 mins
480g asparagus 2 tablespoons chilli-infused
olive oil
Baby rocket leaves Parmesan, finely grated Lemon wedges, to serve
1 Preheat a chargrill pan over high heat.
2 Trim 2cm from the ends of asparagus. Group asparagus in threes, side-by-side, then thread two toothpicks or metal skewers through each group to hold them together.
3 Brush the asparagus with chilli-infused olive oil.
4 Chargrill for 2 minutes each side or until tender.
5 Serve with rocket, parmesan and lemon wedges.
