Zucchini & Dukkah

Serves 4, Prep and Cook 20 mins

6 small yellow zucchini 2 tablespoon­s extra virgin

olive oil

1 teaspoon honey 2 tablespoon­s dukkah 1 wholemeal pitta bread 60g crumbled feta

1 Cut zucchini lengthways into four strips. Toss in large bowl with extra virgin olive oil.

2 Heat a chargrill pan over medium heat. Cook zucchini, in two batches, for 3 minutes each side or until grill marks appear.

3 Toss zucchini with honey and dukkah to coat.

4 Split wholemeal pitta bread in half. Spray with extra virgin olive oil.

5 Chargrill for 1 minute each side or until crisp. 6 Crumble bread over zucchini. Serve topped with crumbled feta.
