Cookies and Cream Espresso Mousse Cups
Serves 4, Prep 20 mins
133g packet Oreo Original cookies 250g block cream cheese, chopped ½ cup Coffee & Milk (see Tip) 300ml tub thickened cream
Dark Kit Kat chocolate, to decorate
1 Place cookies in a snaplock bag and seal. Gently break up cookies with a rolling pin until lightly crushed. Sprinkle evenly among four serving glasses (1-cup capacity).
2 Beat cream cheese in small bowl with an electric mixer until smooth. Add Coffee & Milk. Beat until combined. Transfer to a large bowl.
3 Beat cream in same, clean bowl with electric mixer until soft peaks form. Fold half the cream into cream cheese mixture. Spoon evenly over biscuits in glasses. Top with remaining whipped cream. Refrigerate until ready to serve.
4 Decorate with chopped dark chocolate.
