Bolognese Melts with Italian Salad

Serves 4, Prep and Cook 25 mins

400g packet fresh traditiona­l

garlic bread

425g tub Fresh Beef Bolognese

pasta sauce

1 cup grated pizza cheese

ITALIAN SALAD

200g bag chopped cos lettuce

(see Tip)

3 roma tomatoes, quartered lengthways, cut into thin wedges

1 green capsicum,

cut into thin strips

½ small red onion, thinly sliced ¹⁄ ³ cup drained, pitted

kalamata olives

½ cup coarsely chopped

fresh parsley

¼ cup bottled Italian

salad dressing

1 Place garlic bread, buttered-side up, on a large oven tray. Remove paper insert from bread.

2 Cook in a very hot oven (220C) for about 8 minutes, or until light golden and crisp. Remove.

3 Meanwhile, heat sauce in a medium saucepan until hot. Spoon evenly over garlic bread. Sprinkle with cheese. Return to oven.

4 Cook for a further 5 minutes, or until cheese is melted. Remove.

5 Meanwhile, make salad. Combine all ingredient­s in a large bowl.

6 Cut garlic bread into pieces. Serve with salad.
