Speedy Beef Stir-fry
Serves 4, Prep and Cook 20 mins
¼ cup oyster sauce 1 tblsp soy sauce 2 tblsps honey 500g beef stir-fry strips 2 tblsps vegetable oil 2 cloves garlic, crushed 150g sugar snap peas, trimmed
410g can baby corn spears, drained 1 bunch baby bok choy, trimmed, quartered lengthways Steamed rice and toasted sesame seeds, to serve 1 Combine sauces, honey and ¼ cup water in a small jug. Set aside.
2 Toss beef in half the oil in a large bowl.
3 Heat a large, non-stick wok over a high heat. Add beef in two batches. Stir-fry for about 2 minutes, or until almost cooked through. Remove.
4 Heat remaining oil in same hot wok. Add garlic, peas, corn and bok choy. Stir-fry for 2 minutes. Return beef with sauce mixture. Stir-fry until sauce is thickened and hot.
5 Serve with rice. Sprinkle with sesame seeds.
