Chicken and Rocket Wraps
Makes 4, Prep 15 mins
3 cups (450g) shredded roast
chicken meat
¼ cup finely chopped
fresh chives
¼ cup pepitas, toasted,
chopped
½ cup whole egg mayonnaise ¹⁄³ cup tomato chutney,
plus extra to serve 8 slices Swiss cheese 1 bunch rocket, trimmed 4 Lebanese bread
1 Combine chicken, chives, pepitas and mayonnaise in a large bowl. Season with salt and pepper.
2 Spread chutney evenly over bread. Place chicken mixture down the centre. Top with cheese and rocket. Fold in sides of bread and roll up tightly from the end closest to you to enclose filling.
3 Serve wraps cut in half with extra tomato chutney.
