PINEAPPLE DELIGHTS

Rockmelon and Pineapple with Ginger Lime Syrup Indulge in tropical summery sweets

Serves 4-6, Prep and Cook 30 mins

1 large lime

2 tblsps caster sugar

2cm piece fresh ginger,

peeled, sliced

2 lemon and ginger tea bags ½ rockmelon (800g),

peeled, seeds removed ½ pineapple (600g),

peeled, core removed Fresh mint leaves, to decorate

1 Using a vegetable peeler, cut a 5cm strip of rind from lime. Cut lime in half. Squeeze to extract juice. You will need 3 tsps juice.

2 Place 1 cup water, sugar, ginger and rind in a small saucepan over a medium heat. Stir until sugar is dissolved. Add tea bags. Bring to boil.

3 Boil gently, without stirring, for about 12 minutes, or until slightly thickened. Remove from heat. Stir in lime juice. Strain into jug. Refrigerat­e for 30 minutes, or until syrup is chilled.

4 Slice rockmelon and pineapple into pieces. Place in a large bowl. Add syrup. Toss. Arrange on serving plates. Decorate with mint.
