PINEAPPLE DELIGHTS
Rockmelon and Pineapple with Ginger Lime Syrup Indulge in tropical summery sweets
Serves 4-6, Prep and Cook 30 mins
1 large lime
2 tblsps caster sugar
2cm piece fresh ginger,
peeled, sliced
2 lemon and ginger tea bags ½ rockmelon (800g),
peeled, seeds removed ½ pineapple (600g),
peeled, core removed Fresh mint leaves, to decorate
1 Using a vegetable peeler, cut a 5cm strip of rind from lime. Cut lime in half. Squeeze to extract juice. You will need 3 tsps juice.
2 Place 1 cup water, sugar, ginger and rind in a small saucepan over a medium heat. Stir until sugar is dissolved. Add tea bags. Bring to boil.
3 Boil gently, without stirring, for about 12 minutes, or until slightly thickened. Remove from heat. Stir in lime juice. Strain into jug. Refrigerate for 30 minutes, or until syrup is chilled.
4 Slice rockmelon and pineapple into pieces. Place in a large bowl. Add syrup. Toss. Arrange on serving plates. Decorate with mint.
