NO-WASTE HERBS

Make up a batch of delicious pesto to use up fresh herbs and avoid waste. Place a mix of one or two herbs in a food processor. Try parsley and coriander or basil or mint. Add a handful of toasted pine nuts, cashews or almonds, some grated parmesan, and a small clove of garlic. Process until finely chopped, then drizzle in enough olive oil while continuing to process until mixture forms a paste. Season with salt and pepper. Use straightaw­ay or freeze in small freezer-proof containers for up to two months.
