Japanese Noodle Fritters

Serves 4, Prep and Cook 45 mins

2 x 72g packets chicken

flavoured 2-Minute noodles 6 eggs

½ cup self-raising flour

2 cups shredded savoy cabbage 3 green onions, thinly sliced,

plus extra to garnish

1 small carrot (70g), peeled,

coarsely grated

1 tblsp fresh ginger paste Vegetable oil, for shallow frying Tonkatsu sauce and

mayonnaise, to serve

1 Cook noodles with flavour sachets according to packet directions. Drain. Cool slightly. Cut into shorter lengths with kitchen scissors.

2 Whisk eggs in a large bowl. Whisk in flour until smooth. Stir in noodles, cabbage, onions, carrot and ginger. Season with salt and pepper.

3 Heat enough oil in a large non-stick frying pan over a medium heat to shallow fry. Add about ¼ cup of mixture to pan, spreading slightly to form a fritter. Repeat to make another three fritters.

4 Cook for about 3 minutes on each side, or until golden and cooked through. Remove. Place on an oven tray lined with absorbent kitchen paper. Cover with foil to keep warm. Repeat with remaining batter.

5 Serve fritters topped with a dollop of tonkatsu sauce and mayonnaise. Garnish with extra spring onions.
