Orange Spice Strawberri­es with Ricotta Cream

Serves 4, Prep and Cook 25 mins

1 cup orange juice 2 tblsps caster sugar 1 cinnamon stick

2 x 250g punnet strawberri­es, hulled and halved

RICOTTA CREAM 150g fresh ricotta ¼ cup vanilla yoghurt 2 tsps caster sugar

1 Combine juice, sugar and cinnamon stick in a medium saucepan. Stir over a medium to high heat until sugar is dissolved. Bring to boil. Reduce heat. Simmer rapidly for 8 to 10 minutes until thickened. Remove from heat. Cool. 2 Combine strawberri­es and orange spice syrup in a large bowl. Refrigerat­e for 1 hour.

3 To make ricotta cream, process ricotta, yoghurt and sugar in a food processor until smooth.

4 To serve, remove cinnamon stick from strawberry mixture. Serve with ricotta cream.
