Smashed Avocado and Bacon Sub

Serves 4, Prep and Cook 20 mins

300g shortcut bacon rashers 2 large avocados, halved

1 tblsp lemon juice

400g loaf Turkish bread 3 tomatoes, cut into 2cm pieces 200g soft Danish feta, crumbled Chopped baby cos lettuce

and lemon wedges, to serve

1 Heat a lightly oiled, large frying pan over a medium to high heat. Add bacon. Cook, turning occasional­ly, until crisp and golden. Remove. Drain on absorbent kitchen paper. Cover to keep warm.

2 Place avocado flesh in a bowl. Add juice. Season with salt and pepper. Coarsely mash with a fork.

3 Using a large serrated knife, cut bread horizontal­ly in half. Place, cut-sides up on a large oven tray.

4 Cook in a very hot oven (240C) for about 4 minutes, or until lightly toasted.

5 Spread avocado over cut-sides of bread. Top with bacon, tomatoes and feta.

6 Serve with lettuce and lemon wedges.
