Smoked Salmon Soba Noodle Salad

Serves 4, Prep and Cook 20 mins

2 x 90g bundles soba noodles

150g sliced smoked salmon, chopped

1 medium zucchini (150g), trimmed, shredded

80g baby spinach leaves

¹⁄³ cup fresh mint leaves, torn

¹⁄³ cup dry roasted almonds, chopped

DRESSING

¼ cup olive oil ¼ cup lemon juice 1 tblsp soy sauce 2 tsps caster sugar 1 tsp hot chilli sauce 1 tsp ginger paste

1 To make dressing, whisk all ingredient­s in a small jug until combined.

2 Cook noodles in a large saucepan of boiling water for about 3 minutes, or until tender. Drain. Rinse under cold water. Drain well. Transfer to a large bowl.

3 Add salmon, zucchini, spinach, mint and almonds. Drizzle with dressing. Toss well. Transfer to a serving bowl.
