Air fryer treats to turn kids into keen kitchen helpers

Apple Pie Muffins Makes 16, Prep and Cook 30 mins

2 eggs

½ cup vanilla yoghurt

½ cup milk

2 tblsps light olive oil

2 cups plain flour

¹⁄³ cup firmly packed brown sugar 2 tsps baking powder

1½ tsps ground cinnamon 1 medium red apple,

peeled, finely chopped

4 Scotch finger biscuits, crushed

1 Line 8 silicone cupcake moulds (¹⁄³-cup capacity) with muffin wraps. 2 Whisk eggs, yoghurt, milk and oil in a large jug. Combine flour, sugar, baking powder and cinnamon in a large bowl. Add egg mixture to flour. Stir to combine. Fold in apple. 3 Spoon 2 level tablespoon­s of mixture into prepared cupcake moulds. Scatter crushed biscuits over top.

4 Pull out pan and basket from a 7-litre air fryer. Place 8 cupcake moulds in basket. Slide pan and basket back into air fryer. Set temperatur­e to 160C. Set timer and cook for 18 minutes, or until golden brown and cooked when tested. Remove muffins from cupcake moulds to a wire rack to cool. Re-line the cupcake moulds with muffin wraps and repeat with the remaining mixture.

5 Serve warm or at room temperatur­e.

Fruity Oat Muesli Bars Serves 6-8, Prep and Cook 35 mins

¹⁄³ cup honey

2 tblsps tahini

2 tblsps coconut oil

1 cup traditiona­l rolled oats ¹⁄³ cup dried, sweetened

cranberrie­s

¼ cup dried apricots,

sliced thinly

¼ cup moist coconut flakes ½ cup sunflower seeds 2 tblsps black chia seeds

1 Grease a 20cm non-stick loose-base round cake pan. Line base and side with baking paper, ensuring it doesn’t extend above top of pan.

2 Place honey, tahini and coconut oil in a large microwave-safe bowl.

Microwave on High (100%) for 1½ minutes. Stir until smooth.

3 Add oats, cranberrie­s, apricots, coconut, sunflower seeds and chia seeds to honey mixture. Stir to combine. Press evenly into prepared pan.

4 Pull out pan and basket from a 7-litre air fryer. Place cake pan in basket. Slide pan and basket back into air fryer.

Set temperatur­e to 180C. Set timer and cook for 7 minutes. Carefully pull out pan and basket. Cover securely with foil. Cook for a further 20 minutes, or until lightly browned and firm. Cool completely in pan.

5 Remove slice from pan. Cut into pieces.

Chicken, Spinach and Feta Triangles Serves 14, Prep and Cook 50 mins

1 cup (120g) shredded, roasted

chicken meat

60g baby spinach leaves,

finely chopped

2 tblsps finely chopped fresh

chives, plus extra to serve 1 tsp finely grated lemon rind 100g Greek feta, crumbled 2 tblsps grated parmesan 2 eggs, lightly beaten

7 sheets filo pastry

1 tsp cumin seeds

Greek yoghurt and

lemon wedges, to serve

1 Place chicken, spinach, chives, rind, feta, parmesan and eggs in a large bowl. Mix well.

2 Working with one sheet of filo at a time, cut in half lengthways. Spray with olive oil. Fold each in half lengthways. Spray again with olive oil. Place a heaped tablespoon of chicken mixture at one end of a strip. Fold one corner over filling to form a triangle. Continue folding until you reach other end. Repeat with remaining filo and chicken mixture. Spray triangles with olive oil. Sprinkle with seeds.

3 Pull out pan and basket from a 7-litre air fryer. Place half the triangles in basket. Slide pan and basket back into air fryer. Set temperatur­e to 190C. Set timer and cook for 9 minutes, or until lightly browned and crisp. Repeat with remaining triangles.

4 Serve triangles with yoghurt topped with extra chives and lemon wedges.

Cheesy Vegie Ham Crustless Quiche Serves 4, Prep and Cook 40 mins

5 eggs, lightly beaten ¾ cup grated cheddar cheese ¼ cup light thickened cream

100g shaved ham, sliced thinly

¹⁄³ cup frozen peas and corn

2 tblsps grated parmesan Baby rocket leaves and tomato relish, to serve

1 Grease a 20cm round non-stick cake pan. Line base and side with baking paper, ensuring it doesn’t extend above top of the pan.

2 Combine eggs, cheese, cream and ham in a large jug. Season with salt and pepper. Pour mixture into prepared pan. Top with peas and corn. Sprinkle over parmesan.

3 Pull out pan and basket from a 7-litre air fryer. Place cake pan in basket. Slide pan and basket back into air fryer. Set temperatur­e to 160C. Set timer and cook for 30 minutes, or until lightly browned and cooked. Remove quiche from air fryer. Stand for 5 minutes.

4 Serve quiche sliced with rocket and relish.
