Speedy microwave scrambled eggs
Lightly grease a microwave-safe cup or mug. Add 2 eggs and 1 tblsp milk. Whisk with a fork until well combined. Microwave on Medium (50%) for about 30 seconds, stir with a fork. Microwave for a further 15 to 20 seconds, or until egg is cooked but still a little soft in the centre. Remove. Set aside for about 30 seconds, as egg will continue to cook on standing. Season with salt and pepper. Serve with toast fingers.
