Chipotle Beef Hash Brown Bake

Serves 4, Prep and Cook 40 mins

5 frozen hash browns

750g beef mince

35g sachet Smokey Chipotle Seasoning

375g jar Thick ‘N’ Chunky

Salsa

1 red capsicum, chopped

1 Lebanese cucumber, chopped

1 Place hash browns in a single layer on the microwave turntable. Microwave on High (100%) for about 5 minutes, or until thawed and hot. Remove. Break into large pieces.

2 Meanwhile, heat an oiled, large frying pan over a high heat. Add beef. Cook, stirring to break up mince, for about 4 minutes, or until browned. Stir in seasoning. Cook for 1 minute. Add salsa and

¹⁄³ cup water. Bring to boil. Cook, stirring occasional­ly for about 5 minutes, or until slightly thickened.

3 Transfer mixture to a round ovenproof dish (8-cup capacity). Top with hash browns.

4 Cook in a very hot oven (220C) for about 20 minutes, or until hash browns are crisp. Remove from oven.

5 Scatter over combined capsicum and cucumber. Serve with fresh coriander leaves and lime wedges (optional).
